Even as the world of “senior living dining” becomes more inventive, it’s another thing to be truly innovative. But with Elvis Burrows (Director of Dining Services) and Patrick Tramontana (Executive Chef) at the  culinary helm, The Mayflower at Winter Park is challenging that status quo.

In July, the pair were named 2024’s Innovation Award winners by LeadingAge Southeast. The award honors leaders who represent the highest level of creativity, vision, and excellence in the industry – all qualities Elvis and Chef Patrick bring to the table on a daily basis.

“I am extremely proud of the work that our Dining Services team has been doing and that they’ve been recognized in this way,” said Steve Kramer, Mayflower President and CEO. “Elvis and Patrick have brought things to The Mayflower that you wouldn’t typically find in a community like this – they’ve set a new tone for what senior living dining can be.”

When Elvis and Chef Patrick joined the Mayflower team, change was already in progress. Renovations and menu overhauls had been made at two existing dining venues (the white-tablecloth Winslow and upscale, pub-style Grille), while construction was underway on Bristol Landing, the largest expansion project in Mayflower history. The brand-new neighborhood comprised a freestanding Health Center, Waterside Residences and sophisticated bistro-style restaurant and wine bar, Cru Quarters.

Elvis and Chef Patrick positioned Cru Quarters as a high-touch experience modeled after country clubs and luxury resorts. Staff members get to know returning guests by name – as well as their favorite foods, their go-to drink, and the way they like their steak. As Elvis puts it: “Little things like that are what tip the scale from a good meal to a great one.”

Taking inspiration from the flavors of Italy, France and Greece, the pair challenged preconceptions about what “senior living” dining could look like. Cru Quarters’ 16-page menu highlights seasonal ingredients, fresh breads and pastas, brick-oven-fired pizzas, signature cocktails and mocktails, and curated pairings from a selection of more than 100 wines.

Another highlight for residents has been the chance to go beyond the menu with culinary classes and programs, including five-course “chef experience” dinners, wine tastings, and hands-on pasta-making classes.

“Making it fun, making it interesting, and making sure the food is delicious – it creates a whole new level of enjoyment,” says resident Lawrie Hall. “What Elvis and Patrick have brought to The Mayflower has enhanced the quality of life here … it’s just been a wonderful experience.”
